This weekend i made loads of cakes

Now. About a month ago my pal Gemma asked me to make some cakes for her wedding celebration in August. I jumped at the chance! I immediately started thinking about what kind i could make and how I'd go about doing it with timings etc.

So, as always, i left it til the night before and done all the shopping and baking. 5 hours i was at it. I knew I'd have no room in my freezer to prebake all the cakes so i thought bugger it! Night before it is!

My plan was chocolate (using the dr oetker recipe on the website); choc chip and lemon (using normal 6/6/6/3 recipes); carrot and finally red velvet. 3 out of the 5 iwas happy with, but ive never attempted red velvet or carrot before. I ended up using Nigellas red velvet recipe (buttermilk substitue = milk and lemon juice!! Who knew?!) and some Google carrot cake recipe that looked the simplest (but with normal SR flour rather than wholemeal because i wasn't bloody spending £2 on a bag of flour!!!)

Raging success!! I've never been so proud! I ended up making 69 altogether  (i was originally planned to make 30 bit that went straight out the window when i got excited!!)
And... im pleased to say that there weren't too many left when we tumbled out the party at 1am this morning :-)

So today i woke up feeling fresher than i expected and decided i wanted to bake more. The girls at work will hate me, i think I'm a feeder.
I had stuff left over so another red velvet was to be made (well, technically fuscia velvet because the Nigella recipe used a whole bloody pot of colouring paste, and it was either fuscia or sky blue). 
I made a whole cake this time rather than cupcakes so want really sure of the timings. I think it ended up a wee bit dry but its bloody lovely!

As an aside, i bought spices from the website curryfrenzy this week and decided i would make a naga curry for tea.

I'm not sure if my bum will tolerate the aftermath tomorrow...

Tonight i took photos of the stuff i made yesterday!

Well, yesterday i was meant to be revising for a new autism module I'm doing with the open uni  for work. So naturally i found any way possible to distract myself from sitting down with my books. 

The result was a nutella cheesecake, meringues, and homemade vanilla ice cream.

All in all they weren't too horrible - i was quite chuffed with myself if truth be told!  The cheesecake was a Nigella effort but with no hazelnuts. The meringues came from a basic Mary Berry recipe and the ice cream was the first one that came up on Google that didn't involve an ice cream maker!

Previous to these, i also made some blueberry and white chocolate cupcakes (that i made up myself really, and hoped for the best )and some pancakes that are slowly going hard in the kitchen as i type this!

Its my birthday on Friday so i think I'm might attempt some nice savoury food for then. Who am i kidding, I'll probably get a steak and eat it blue with an onion. I'm classy, me.  If anyone reading this  (anyone??) Has some nice birthday treat suggestions please let me know. I do enjoy a challenge :-)

Tonight i used up the rest of my pumpkin puree

Well tonight i watched the GBBO Masterclass and decided to make something with the rest of my pumpkin puree that i done last night. I didn't want another roulade  (i didn't have enough pumpy left and also it was bloody messy!) so i took to t'internet and found a cupcake recipe :-)

Plain flour, bicarb and mixed spice combined with pumpy, egg, milk and a fair wee whack of sugar and i ended up with a no bad looking mixture!

I went to pop it into my cases them remembered i bought an ice cream scoop just for this very purpose :-D unfortunately, i overestimated the first cake and had to scoop half of it out again  (but i live and learn! !)

25 minutes in a 170° oven and wallah!
They wouldn't win a beauty contest, but well neither would I :)
There no bad eh? I've got the rest of my frosting left over from last night to use up so that'll get used up when they're cool!

I'm not counting my chickens yet, they might be mingin! But at least they're made :-)
